
Mediterranean Ragu
A wonderfully easy summer vegetable recipe packing in four of your five a day. Enjoy it as a vegetarian option with Greek feta cheese or opt for a vegan feta.
Method:
- Cut up all the vegetables, place them in an oven dish.
- Crumble in the feta.
- Dress generously with olive oil and mix everything together.
- Season with salt, pepper and dried oregano.
- Place in the oven at medium heat 180 C for 20-25 minutes, or until the vegetables are soft and slightly roasted.
